What We Did

We outfitted Gilley’s kitchen, bar, and dining areas with equipment built for efficiency, durability, and the fast-paced demands of a busy entertainment venue. Key highlights include:

• BBQ Area Redesign – Converted the initial table service concept to a pickup-from-the-line setup.
• Long-Draw Beer Dispensing – Installed systems across 6–7 bar locations, including nightclub runs of 200–300 feet and casino runs up to 500 feet.
• Full Installation and Project Management – Oversaw seamless integration of all equipment with existing workflows to support staff efficiency and guest experience.

Challenges and Resolutions

The project presented several challenges:

• Glycol Chase Way Issue – The original design did not include space for glycol runs, which were essential for refrigeration and draft systems. We drew on our industry network to quickly identify a partner who could design and install the necessary chase ways without impacting the rest of the project.
• BBQ Redesign Mid-Project – The BBQ area was initially planned for table service, but a pivot to pickup-from-the-line was suggested after construction had already started. Our team developed a rapid redesign strategy, adjusted layouts, and coordinated with contractors to implement the new plan efficiently.
• Strict Timeline – Scheduled performances and events left no room for delays. Every adjustment had to be carefully timed and executed, requiring meticulous planning and coordination to ensure the project stayed on track without disrupting operations.

By providing the right tools, systems, and project management expertise, Rapids Contract & Design enabled Gilley’s to maintain high standards for food and beverage service while keeping operations running efficiently behind the scenes.
