Our team was involved in every phase, including layout and kitchen design, equipment package specification, procurement, installation, and full project management. This holistic approach ensured that every aspect of the space supported both the culinary needs of the kitchen and a seamless, enjoyable experience for guests.

We worked closely with the client to understand their vision, operational goals, and long-term plans, ensuring the final design could meet immediate needs while remaining scalable for potential future franchise locations.

Overcoming Challenges and Delivering Solutions

Big Bore Barbeque aimed to bring authentic Texas-style barbecue to the Upper Midwest, requiring indoor smoking capabilities that could faithfully replicate traditional methods. The site’s long-vacant building posed structural and construction obstacles, demanding careful planning to revitalize the space while creating a layout optimized for a modern, high-volume BBQ operation. Scalability was also a key consideration, as the design needed to support potential future franchise locations without compromising the quality or consistency of the barbecue.

Central to the project was the installation and management of specialized indoor smokers. Our team sourced high-capacity smokers capable of delivering authentic Texas flavors, then integrated them under advanced hood systems designed to precisely control smoke exhaust and airflow. This allowed the kitchen to safely operate full-sized smokers indoors while maintaining consistent cooking conditions and preserving the distinctive barbecue profile. The layout and hood technology were engineered for repeatability and efficiency, ensuring staff could work seamlessly while providing guests with an authentic barbecue experience.

This project was led by Solutions Engineer Tom Roberts, who provided creative design strategies, Project Manager Rob Weiler, who oversaw installation and coordination from start to finish, and Christy Hodnefield, Director of Design, who guided the overall design vision. Their collaboration transformed a previously underutilized space into a fully functional, operationally efficient, and inviting BBQ destination, setting a new benchmark for indoor smoked barbecue in the region.
