On October 17, 2024, our team received valuable training from Tony Thill of M2 / Solventum during his visit to our test kitchen. Tony shared key insights into the importance of water filtration for the foodservice industry, particularly in markets like restaurants, bars, fast food establishments, schools, colleges/universities, and healthcare. He focused on how Reverse Osmosis (RO) systems protect kitchen equipment like combi ovens and steamers. Tony also highlighted how proper filtration helps reduce maintenance costs, prevent scale buildup and corrosion, and ensure optimal water quality for food preparation across these diverse sectors.

The Importance of Water Filtration in Food Service

Water quality plays a significant role in the longevity and performance of key kitchen equipment like combi ovens and steamers. Even if your water is perfectly safe to drink, minerals and impurities can cause corrosion when the water is heated to the high temperatures required for these machines. Over time, this can lead to costly repairs or replacements.

How RO Systems Work?

One of the key features of 3M’s system is that it senses when the combi oven is undergoing a cleaning cycle and adjusts accordingly.

Additionally, the system handles wastewater produced during the RO process by using an integrated pump, which requires no electricity and works solely on incoming water pressure. This pump efficiently separates waste and sends it down the drain, making the system both practical and cost-effective.
