Recently, our team had the privilege of participating in a Sammic training session led by expert Nate Sanford. This hands-on experience allowed us to explore Sammic’s state-of-the-art technology, learning how their equipment simplifies processes and delivers exceptional results, particularly for applications requiring precision, such as IDDSI-compliant meal preparation.

The Sammic Emulsifier: Precision and Versatility

One of Sammic’s standout products is the emulsifier, a robust solution for creating smooth, consistent textures in seconds. Key features include:

  • Variable Speed Control: Achieve precise textures with a wide range of speed options.
  • Customizable Programs: Standardize recipes with built-in programs or create your own for unique needs.
  • Cut & Mix Technology: A built-in scraper ensures smooth, efficient mixing.
  • Interchangeable Blades: Includes perforated, cutting, toothed, and flat blades for versatile applications.
  • All-Stainless-Steel Construction: Durable and hygienic, ideal for high-volume environments.
  • Reverse Mixing: Ensures thorough mixing without over-processing, allowing operators to check texture for appearance and fork pressure before adding a thickener.
  • User-Friendly Design: Advanced control panel and a lid opening for adding ingredients on the go.
The Sammic emulsifier is a powerful, innovative tool for any kitchen, offering precision, speed, and reliability, making it an essential asset for foodservice operations.
Precise Pulse Technology
Enables operators to set pulse levels from 1 to 100 or create specific “recipes” for consistent results, ensuring precision beyond standard processors.
IDDSI Framework Compatibility
Ideal for preparing texture-modified diets, ensuring safe, consistent meals that meet healthcare standards.
Brushless Motor Technology

Prevents overheating, ensuring long-lasting reliability and addressing a common issue found in many competitor models.

Higher Volume Capacities

Efficiently processes larger quantities, making it ideal for the high demands of busy commercial kitchens.

Understanding the IDDSI Framework

The International Dysphagia Diet Standardisation Initiative (IDDSI) Framework is a globally recognized standard that defines food textures and drink thickness levels to support individuals with dysphagia—difficulty swallowing. It ensures consistency and safety in preparing meals for those with eating, drinking, or swallowing challenges, making it a critical tool for healthcare settings.

The IDDSI continuum includes two main categories: drinks and foods. Levels 0 to 4 address drinks, ranging from thin liquids like water to extremely thick drinks, while Levels 3 to 7 cover foods, starting with liquidized or pureed options and progressing to soft, bite-sized foods and regular, easy-to-chew meals. This classification ensures that texture-modified diets are accurately tailored to the unique needs of patients.

Recently, there has been a notable increase in the adoption of the IDDSI Framework across healthcare kitchens. Medical professionals—such as primary care physicians, dietitians, neurologists, gastroenterologists, ENTs, and speech-language pathologists—are actively referring patients to facilities compliant with these standards. This growing trend presents an excellent opportunity for Sammic, as many facilities are now seeking innovative equipment to meet these requirements efficiently and reliably.

Here’s a quick overview of the IDDSI levels:

  • Level 0: Thin drinks (like water).
  • Level 1: Slightly thick drinks (can flow through a straw).
  • Level 2: Mildly thick drinks (sippable from a cup, but requires effort to drink from a straw).
  • Level 3: Moderately thick drinks or liquids (can be eaten with a spoon or drunk from a cup).
  • Level 4: Extremely thick drinks or pureed foods (smooth, lump-free, requiring no chewing).
  • Level 5: Minced and moist foods (soft with small lumps, requiring minimal chewing).
  • Level 6: Soft and bite-sized foods (tender and easy to chew).
  • Level 7: Regular foods (easy to chew).
Nate demonstrates how to use Sammic equipment to achieve the perfect textures for modified diets at IDDSI levels.
For healthcare providers, aligning with the IDDSI Framework is crucial. Sammic equipment, like the emulsifier, ensures that food and drinks meet these texture and consistency standards, promoting safety and nutrition for patients.
