Tonganoxie High School

Tonganoxie High School is a renovation project of an existing space within the high school, located west of Kansas City. The cafeteria and kitchen areas were in need of updating and modernization for functionality, student flow, and efficiency.

The original space had design and equipment dating back to the 1960s and 1970s. By modifying the student flow through the facility into a scatter pattern instead of a single file line, service staff is now able to serve far more meals in a much shorter timeframe. The equipment package upgrades were also extensive. Another key component aiding in the efficiency of the space can be found in the dishroom. A Salvajor trough system was built into the design allowing staff to very quickly pre-rinse and process soiled trays and serving ware prior to entering the ware-washing equipment.

Another very intriguing part of the build was to accommodate the school staff and nutritionists desire to continue to “scratch bake” their dinner rolls – a process steeped in tradition in their school. The mixing and baking equipment were carefully selected to keep this tradition going while modifying the process slightly with modern practices.
